My Daddy's Southern Fried Okra, it is my Dad's southern way as he was raised in South Arkansas: Ingredients are about twelve tender okra pods (2 cups?) sliced into bite-sized" pieces, 1 beaten egg with about 2 spoonfuls whole milk, 1 cup yellow cornmeal, 1/2 tsp salt, 1/4 tsp black pepper, and 1/2 cup vegetable oil. Soak the okra in room-temperature egg mixture, not cold but room temp. to soak okra for about 8-10 mins (hopefully okra is already tender when bought). In another bowl, mix the cornmeal, salt, and pepper. Heat the oil in a skillet (cast iron is always the best) over medium-high heat. Coat the okra bites evenly in cornmeal mixture and place in hot oil and stir them continuously or because they can burn easily. Reduce heat to medium when okra first starts to brown, and cook until golden but not too browned or the flavor is not so good. Maybe they can also be cooked in an air fryer, unsure of that though.
