Ingredients for Rosemary Chicken and Potatoes Skillet
5 boneless skinless chicken thighs or chicken breasts
8 small red - skinned potatoes - halved
3 tablespoons butter
1 teaspoon minced fresh garlic
3 tablespoons chopped fresh leaves and sprigs of rosemary
Salt and black pepper to taste
1 fresh lemon, if desired (l prefer it!)
How to Prepare Rosemary Chicken and Potatoes Skillet
Melt the butter in a large nonstick skillet, or castiron skillet over medium-high heat (if using cast-iron, add a tablespoon of virgin olive oil). Add garlic and saute for about a minute until fragrant. Add the chicken and potatoes to pan. Sprinkle with salt, black pepper, and rosemary. Cover and cook for about 10 minutes. Turn the chicken and cook another 5-6 minutes while covered until the chicken is cooked through and the potatoes are fork tender. Serve hot, and sprinkle with lemon juice, if desired.
