Chili Cook Off Ideas and Best Recipes

Chili Cook Off 2021 - 2022 is officially here! The best chili is so full of flavor and satisfying, with hearty beans and meat (usually beef). It is perfect for fall and the chilly days when a warm bowl of chili is just what the doctor ordered!  Feel free to share your chili cook off ideas in the comment section! I have several chili recipes that I go to but here is my My Great Aunt Arizona 's yummy recipe and sometimes she even roasts her own Poblano chilis because they are so much more flavorful than canned!

INGREDIENTS:

2 pounds ground beef
1 medium white onion diced
5 garlic cloves
4 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon black pepper
1 (14.5 ounce can) beef broth
2 (15 ounce cans) red kidney beans rinsed
1 (14.5 ounce can) diced tomatoes
2 (4.5 ounce cans) green chilies
2/3 cup finely crushed tortilla chips
Shredded cheese, cilantro, sour cream for serving

DIRECTIONS:

Heat a large pot over medium high heat. Add ground beef and cook until browned, about five minutes. After 5 minutes add in the onion and saute 3 to 5 minutes until tender. Drain any excess grease. Add the garlic, chili powder, cumin, salt, and pepper and saute 1 minute more. Stir in the beef broth, tomatoes, beans, and green chilies. Bring to a boil. Reduce heat to low and let simmer, covered, 45-60 minutes, stirring every 10 minutes. Remove the lid and stir in the tortilla chips. Let rest for 10 minutes, uncovered, to thicken. Serve topped with sour cream, shredded cheese, chives, cilantro, diced onions, bow-tie pasta, tortilla chips, cornbread and even potatoes!

      I love this food recipe, it is really good. The ground beef, the hearty beans with the yellow cheese combination makes it very eatable.

        People better don't see this photo if they are feeling hungry!  What a delicious tentation.. and who care about excess grease as longer I have shredded cheese, chives, cilantro, diced onions on a tortilla.
